        <p>You really need the Western type of sweet potato or yam for this - unfortunately Japanese sweet potatoes (satsumaimo) have the wrong texture. Of course you can do those sweet wedges with satsumaimo sprinkled with black sesame seeds&#8230;. a recipe for another day.</p>
